A franchisee for Spartansburg, S.C.-based Denny's is looking to make a grand slam for the environment by building the chain's first Leadership in Energy and Environmental Design (LEED)-certified unit. The eco-friendly restaurant, in Joliet, Ill., is expected to feature efficiency-rated equipment; a roof and wall insulation that conserves heating and cooling energy by maintaining the interior temperature; and natural lighting from south-facing windows and ceiling skylights. Additionally, the dining room will be constructed of recycled materials -- including the flooring -- and low-VOC paints, sealants and glue.
