The new owner of Baja Fresh Mexican Grill and La Salsa Fresh Mexican Grill is hoping to jumpstart development in U.S. and international markets. James Walker, president of California-based Baja Fresh, says smaller store prototypes with reduced construction and operation costs may help lure prospective franchisees. New stores offer a range of sizes including fast-casual store prototypes -- 1,200 to 2,000 square-foot Baja Fresh and La Salsa Grill; the 2,200 to 3,200-square-foot La Salsa Cantina; and the 3,500 to 6,500-square-foot, full service La Salsa Restaurant. Smaller, limited-menu venues include the 675-square-foot Baja Fresh Express and La Salsa Express.
