Baja Fresh Rolls Out New Prototype

In an effort to boost its dinnertime sales, the 300-unit Baja Fresh Mexican Grill chain is testing a new prototype in Irvine, Calif., that features a more upscale design, Nation's Restaurant News reports. The updated look incorporates natural materials such as wood and stone, rather than the black-and-white ceramic tile and laminates of earlier locations.

"The colors are meant to be warmer and a little more inviting for an in-store experience, especially at dinner," Chuck Rink, president of Baja Fresh and sister brand La Salsa, told NRN. Rink also said the new design will be utilized in all new Baja Fresh units going forward.
