Benihana Inc.'s recently unveiled "renewal program" includes hiring designer Eriko Horiki to create several new Japanese elements for the restaurants in its flagship chain. The efforts by Horiki, a Japanese creator of original interior artworks of Washi paper, will be integrated into Benihana's Teppanyaki restaurants later this year.
The renewal program, which also involves other upgrades to the restaurants' dining experience and menu, is designed to "increase guest frequency, create greater mindshare and ultimately bolster restaurant sales," the company said. Miami-based Benihana is the nation's largest chain of Japanese theme and sushi restaurants, with 65 Benihana Teppanyaki restaurants, nine Haru sushi restaurants, and 25 RA Sushi Bars.
