First unit to open next year
Chipotle Mexican Grill has announced plans to open its first Asian-inspired restaurant, in 2011. The company said a small team, led by founder, chairman and co-ceo Steve Ells, is working on creating an Asian restaurant concept that follows the Chipotle model.
“This Asian restaurant is just an opportunity to see how our model works when we use different ingredients and a different style of food,” Ells said. “This restaurant will allow us to take a look at that.”
The Denver-based company did not disclose the specific locale or timing for the opening of its first Asian unit. Founded in 1993, the company currently operates more than 1,000 restaurants.
