Otarian, a new vegetarian quick-service restaurant chain built on a sustainable platform, has opened its first two restaurants in New York. The fledgling chain, owned by Australia-based Oswal Group Global, plans to open a third locale in New York later this year, along with two restaurants in London.

“Vegetarianism is the most sustainable way of eating and being,” says Otarian founder Radhika Oswal. “Vegetarian food has a lighter ecological footprint, reduced resource impacts, and lower carbon emissions than non-vegetarian equivalents. Our goal is to provide consumers with the quantifiable and measurable benefits of each delicious vegetarian alternative they choose at Otarian, and thus, empower them to make a positive impact on the environment one meal at a time.”

Otarian customers can consume that eco-friendly cuisine in locales whose design and architecture incorporate a variety of sustainable features, including the use of floor tiles made from recycled glass, table tops made using recycled plastic, ceiling decor created out of recycled aluminum, and chairs made from sustainably sourced bamboo.

The company's first two New York eateries are located on Bleecker Street and 8th Avenue, respectively. A third locale will open later this year on Lexington Avenue. Slated to open soon in London are Otarian outlets on Shaftesbury Avenue and Wardour Street.
