Gourmet Mexican Chain Starts European Push

Cantina Laredo’s London restaurant the first of 35 plans units planned for the U.K., Ireland


Consolidated Restaurant Operations Inc. (CRO) has opened the first of up to 35 Cantina Laredo gourmet Mexican restaurants it plans for the U.K. and the Republic of Ireland. The first Cantina Laredo is a two-level, 7,200-sq.-ft. space with seating for 220 in St Martin's Courtyard, a new shopping and dining destination in Covent Garden, London.

The opening of that London locale “represents further significant expansion of the footprint of our brand and solidifies our global appeal," said John D. Harkey, Jr., ceo of Dallas-based CRO, which operates and franchises restaurants under the Cantina Laredo, III Forks, Silver Fox, Good Eats, Luckys Cafe, El Chico and Cool River Café brands.

Serving as CRO's inaugural franchisee for the European expansion of its Cantina Laredo concept is Oriole Restaurants Ltd. Oriole ceo Jackie Ginsberg believes Cantina Laredo will fill in a gap in the market for high-end Mexican cuisine. “In the UK, we consider Tex-Mex and Mexican food to be one and the same,” Ginsberg explains. “Tex-Mex restaurants really don't represent the depth and variety of authentic Mexican food, nor the skill required to prepare it. That's where Cantina Laredo steps in.”
