Upscale eatery in Beverly Hills a prime example

The Bazaar by Jose Andres restaurant/bar in Beverly Hills, Calif., may be the future of fine dining, The Wall Street Journal reports. The year-old-restaurant – located in the lobby of an SLS Hotel – cost $12 million to build and has thus far grossed $13 million.
While many hotel restaurants have traditionally been associated with mediocrity, the Journal reports that “these days, hotels are among the only investors willing to bankroll big, splashy new restaurants. Restaurateurs say fine dining will largely migrate into hotels, resorts and some commercials developments.” The Bazaar's attractions include a tapas-style menu, a focus on the bar scene and a 12,500-square-foot open floor plan that's designed to get diners to return more often by offering a different ambience each time.
