Obikà Mozzarella Bar, which was born in Rome in 2004 and has grown to 12 units in such cities as Kuwait City, London, Milan, New York and Tokyo, is planning a major expansion in the U.S. Innovative Hospitality Concepts (IHC), owner of the "fresh casual" metro dining concept, has announced plans to open 20-plus mozzarella bars along the Eastern seaboard over the next 10 years. The company says Obikà (Neapolitan dialect for "Here it is!") mixes the appeal of a sushi bar with authentic Italian offerings served a la carte.
Several of Obikà's restaurants, including its New York locale, were designed by Labics, an Italian architecture firm. The New York restaurant features stylish kiosks that place the chain's signature mozzarellas center stage in lighted glass tanks, along with a blend of blonde wood and steel. The result is a warm, contemporary look that the venture's backers plan to replicate at future locations.
