Prototype restaurant design features roofline mimicking workers’ folding hats

The Steak n Shake chain has unveiled a new prototype for future restaurants that will feature a roofline that references the folding hat worn by its employees, along with an open interior housing a steakburger grill and milkshake stations that are more visible to customers. The company showed rendering of the new-look restaurant at its annual meeting, during which shareholders also changed the name of the restaurant chain's parent company to Biglari Holdings Inc., the Indianapolis Business Journal reports.

The company's new prototype has about 3,200-square-foot and a price tag of about $1.5 million, as compared with its existing 4,200-square-foot model that costs $2.2 million. The restaurants still will seat about 100 people. Dining areas will be visible from outside thanks to floor-to-ceiling glass, and lifesize classic photos showing Steak n Shake's history will be integrated into the environment.

The are currently more than 500 Steak n Shake restaurants, and Biglari Holdings ceo Sardar Biglari said the company plans to open about 1,500 new franchise locations in the U.S. over the next several years.
